Yummy Crepes


I found this recipe on "Real Mom Kitchen" blog. She has an awesome blog, go check her out. Also while you are there, check out her yummy Hawaiian bread.

Crepes

2 eggs
1 1/4 cup milk
3/4 cup flour
shortening

Beat eggs until light. Add milk and flour and mix until smooth. Heat small (about 8 inch) Teflon skillet or crepe pan. Heat skillet on medium and add a dab of shortening to the pan. Pour in a scant 1/4 cup batter. Lift the pan and tilt it back and forth until batter spreads evenly in a circle. When batter looks dull and dry, with a quick flip of the wrist, flip crepe over with a spatula and cook about 30 seconds or until light brown in areas. (I use a silicone spatula to do this). Roll or fold crepes and serve with syrup, jelly, fresh fruit, mousse, or pie filling. Of course once filled, I like to add a dollop of sweetened whipped cream! Makes 12-14 crepes.

Mousse in a Minute (The cheesecake mousse)

1 small pkg instant pudding (any flavor you like, I used cheesecake)
1 1/2 cups cold milk
1 cup cool whip

Mix pudding as directed on package using 1 1/2 cups milk. Fold in whipped topping. Makes 2 2/3 cups.

French Toast Souffle


What you need:
8 oz cream cheese softened
1 cube butter
1 cup maple syrup (I just used pancake syrup)
12 eggs
2 cups half/half (I used 1 cup cream and 1 cup skim milk)
1 tsp vanilla (more if you like)
1 1oaf of cinnamon bread (from your local bakery)


Mix together cream cheese softened, Butter and syrup. Microwave above for 30 seconds and beat until smooth

Break bread into 1 ½ inch pieces and put in a 9 by 11 inch baking pan.
Pour cream cheese mixture over the top of the bread.

Beat eggs, half/half and vanilla until frothy, pour over cinnamon bread in pan.

Bake at 350 for 60 minutes.
Dust with powder sugar, fruit, or syrup. (I did all three) Serve hot.

Can be made the night before and put into hot oven 1 hour before you serve.

Honey Lime Fruit Toss

This is my Grandma's recipe, it is great for summer picnics! Easy to make too!

Pineapple chunks (drained, keep 1/4 c. juice)
Mandarin oranges (drained),
sliced bananas
Sliced strawberries
1 kiwi
Mix together in a large bowl.

Dressing:
1/4 c pineapple juice
1/4 tsp. grated lime peel
2 Tbsp. lime juice
1 Tbsp. honey
Stir together in a small bowl

Toss fruit with dressing and serve.

5 Minute Chocolate Cake



For those who are like me and could eat chocolate everyday, this cake is perfect! It actually taste a lot like as mixture of brownies and cake. Either way, two perfect desserts! A very dangerous dessert, why? Because now we are only 5 minutes away from chocolate cake at any time! I got this from a friend of mine (many thanks to ma Laura). Hope you enjoy it!
What you need:
4 Tb of flour
4 Tb of sugar
2 Tb of cocoa
1 egg
3 Tb milk
3 Tb of oil
3 Tb chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug

What to do:
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well again.
Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes on high (1000 watts) .
If the cakes rises over the mug, don't be alarmed!


Allow to cool a little then tip out onto plate if desired.
EAT!!!! (this can serve two if you wat to feel slightly more virtuous).

I served ours with a little vanilla bean icecream, hot fudge and nuts on top! YUMMY!
